What E920 (L-cysteine) actually is

L-cysteine is an amino acid used to relax dough so it can be worked faster. It is why commercial bread and pizza bases can be produced at industrial speed, and it appears in most mass-produced bakery.

It can be extracted from any keratin-rich material. Historically the cheapest source was human hair collected in China, which remains in use. Poultry feathers are now the largest commercial source, and bacterial fermentation is a growing synthetic route.

Why the source matters here

Duck and chicken feather derived L-cysteine is generally accepted, as is the fermentation route. Those two cover most of the current market.

Hog bristle derived L-cysteine is haram. Human hair derived L-cysteine is rejected by the substantial majority of halal authorities on the grounds that human material is not permissible for consumption, and it is also widely objected to on grounds unrelated to halal.

None of this appears on a label. E920 is E920 regardless of what it was extracted from, and there is no labelling requirement to say. For a product you eat frequently this is worth one email to resolve.

How to check it yourself

  • Ask the manufacturer directly, naming the routes: is your L-cysteine derived from poultry feathers, fermentation, or keratin from another source? Manufacturers using the feather or fermentation route usually answer readily.
  • Halal-certified bakery products have had this question resolved as part of certification.
  • Products marked vegan cannot use the feather, bristle or hair routes, leaving only fermentation.
  • Home-baked and artisan bread generally does not use E920 at all — it is a industrial-scale speed additive.

Common questions

Is L-cysteine really made from human hair?

Some of it is. Hair collected in China has been a commercial source for decades because keratin extraction is cheap. Poultry feathers are now the larger source, and fermentation is growing, but the hair route has not disappeared.

Is E920 in all bread?

No. It is used in high-speed industrial bakery. Slower-fermented, artisan and many home-style breads do not need it, and it would have to be declared if present.

Is fermented L-cysteine halal?

Yes. The bacterial fermentation route involves no animal or human material and raises no issue.
