What E339 actually is

E339 is the sodium salt of phosphoric acid (E338), used as an acidity regulator, emulsifying salt and sequestrant — common in processed cheese, meat and powdered drinks.

Why phosphates are not automatically mineral

Our reference table marks the common food phosphates — E339, E341, E450, E452 — doubtful for animal source. In Europe, phosphoric acid and its salts are sometimes produced via a bone-ash route as well as from mined phosphate rock. The finished additive is chemically identical either way, and the label never states which pathway was used.

This is a documented industrial pathway, not speculation — our table's review note on E450 says so explicitly. It is a different case from additives where an animal route is only theoretically possible.

A suitable for vegetarians mark is the practical signal that the mineral route was used. Without it, the ingredient list alone cannot settle the question. E542 (bone phosphate) is the related additive that names bone in its identity; these codes do not, which is why the doubt is harder to spot.

Is sodium phosphate always mineral?

Is this the same as E542?

Related but not identical. E542 is edible bone phosphate — bone is in the name. These codes can share a bone-derived pathway in Europe without saying so on the label.

Does a vegetarian mark settle phosphates?
